Freezing a track
Freezing a track keeps its keyframes but stops using them for a while: the property holds one value, so you can see the scene without that motion, or work on it, and bring the keyframes back with one click.
Step by step
Freeze the rocking
The boat sails across and rocks as it goes: two tracks, Position and Rotate. Hover the boat's Rotate row in the timeline and click the snowflake at the left of its name. The row and its keyframes turn grey, and the boat holds the angle it has at the playhead.
Select the boat
Click Boat in the Layers panel. In the inspector, the beside Rotate is greyed out: a frozen track takes no keyframes.
Tilt it
Type 8 in Rotate and press Enter. The boat leans a little, at every moment: you change the value the frozen track holds, and no keyframe is added.
Play it
Press Space. The boat sails across, still leaning, without rocking: its Position track plays, the frozen Rotate track doesn't.
Unfreeze it
While it plays, click the snowflake again: on a frozen row it stays in view. The Rotate keyframes are back in use and the boat rocks again; the tilt you typed no longer shows, as the keyframes set the angle.
